I think it's all down to the just-right rice. Some recipes advise cooking the rice in 50-50 coconut milk/water. Others advise rice w 100% water, and then heat coconut milk to pour in later. Tried both with indistinguishable results. Sticky rice is four times as thirsty as arborio rice, so I've not reached the limit of its spongeneity.
