AKICOLJ: Configure My New HP Ubuntu Netbook

I needed another portable calendar/file reader/lightweight text editor/address book kinda deal, with a keyboard.
The look and feel of HP's 1000 Mini was seductive, but I could not handle dealing with Windows. I've been a Mac user since 1985.
So I ordered one with HP's Mini 1000 MIE (for "Mobile Internet Experience." It's Ubuntu 8.x. To make the box friendly to first timers, HP has limited which applications are readily available to a simple one-stop welcome/launcher. Contrary to some press reports, the command line is readily available.
But I need to modify this to my needs. Not a whole lot, and I really don't want to understand how to do it. I'm looking for a Madison-area Linux super-user who'd be willing to futz around and set up my cute little box the way I want. (And create a USB restore image of it, too.)
I'm open to barter or even cash money.
