Just finished a real thriller:
Celiac Disease: A Hidden Epidemic
P H Green & R Jones, Collins, 2006.
It's chock full of science, medicine, cookery and detailed explanations. I love me those details. In particular, distilled vinegar is gluten-free. Malt vinegar isn't safe, but I can go back to enjoying pickles.
Since kosher dills used to be one of my major food groups, it's a frabjous day!

Cider vinegar is also very good on sautéed greens -- somehow it complements the slight bitterness of kale and cousins.
