Thanks to [personal profile] runpunkrun and [personal profile] isis for extensive variations, I stumbled into a really tasty gingerbread with an exquisite crumb--delicate and coherent, unlike any GF cake I've made so far.

Chewy Gingerbread Bars

(Gluten and Dairy-Free)

Equipment:

Stand (or hand) mixer
9x9 or 8x12 pan

Ingredients:

3/4 cup canola oil
3/4 cup white sugar
1/4 cup unsulfured molasses
2 large eggs

1 cup brown rice flour
1/2 cup almond flour
1/4 cup buckwheat
1/4 cup quinoa

1/4 tsp. xanthan gum
2 tsp. ground ginger
1 tsp. ground cinnamon
1/2 tsp. ground cloves
1-1/2 tsp. baking soda
1/2 tsp. table salt

Instructions:

Preheat oven to 350 degrees F.
Grease pan.

Beat oil, sugar, molasses, eggs until totally combined.

Stir the dry ingredients together. Add a little at a time to wet mixture.

Glop the batter into the prepared pan.
Bake for 25-35 minutes.
Test the center for doneness with a toothpick or wooden skewer. It shouldn’t be gooey, but also shouldn’t be dry. (Think: brownies.)

Let cool and cut into bars.
